Ok, confession! I hesitantly tasted the mix after spooning it into the cups and the next thing I know, the mixing bowl was clean! lol I already KNOW the actual cheesecake cups are going to be OUT OF THIS WORLD! Thanks for sharing this recipe. And 4 net carbs – WINNER!!!!!

I didn’t make the almond flour crust. Just put the cheese batter in the cups and baked. Didn’t have sour cream so I used greek yogurt instead. So good!

I am making these right now. I added a touch of cinnamon to the both mixtures and the filling tastes just like regular cheesecake filling. I cant wait to eat these.

It's an almond flour crust, to be correct, not a "graham cracker crust" as stated. She must have made an oopsie. Wouldn't really be low carb with graham crackers as the crust.

I made these last night AND your full-sized cheesecake but used the cheesecake filling from the large one to fill the minis since it's so much filling to begin with. I added a rhine of a lemon and juice of 2 lemons to give it the cheesecake tartness and then I cooked a berry blend on the stove with a little but of powdered sweetener and swirled it in. Came out AMAZING! So excited to share with my family today

If you dont want too much crust i would cut the 2/4 (almond flour) from the crust ingredients. and double the cheesecake batter. You can turn this into a fatbomb treat if you use ghee for the crust and make the crust thinner. Then add mct oil to the batter.
