    My current favorite Keto meal is Italian smoked chicken sausages, slit lengthwise, tuck a mozarella stick in each one and smother with Rao's garlic pasta sauce. Bake until cooked through. mmmMMMMmm!!!

    I do tuna or mackerel mixed with mashed avocado, salt, pepper, and lemon juice. Or shrimp ceviche with thawed precooked shrimp, tomato, cucumber, avocado, red onion, cayenne, and lime juice. Great for hot summer days, too! No oven!

    I have a question, u really do not care for Avocado, I have tried it 4 or 5 times. Seems to be just nothing and tasteless. And seems rather big on carbs. What else to use?

    I make something I call plate pizza….spread cheese out on a plate then top with pepperoni microwave and roll it up and dunk in sauce if desired..pizza rolls ups vould be another name

    Mmmm that tuna idea gave me musubi vibes. You can add a little liquid aminos and furikake to the mixture and eat them inside nori. Yummmmm now I want tuna. Lol.

    I’m definitely going to make the breakfast yogurt. I haven’t eaten yogurt in a while and that looks good. Even as a dessert!

    I’ve made something similar to your lunch (though I have to say you’re a brave woman, dumping that can of tuna in undrained – I just can’t!) but using Italian salad dressing or vinaigrette and some Italian seasoning instead of mayo, and a handful of quartered cherry tomatoes or halved grape tomatoes. If I have a minute and want to be fancy, I’ll dive a bit of cucumber and toss in some olives, green or black.

    I make something similar to your Pizza Bowl, too. I mix a couple of spoonfuls of ricotta with about a half cup of sauce and some quartered pepperoni slices in a ramekin. Stir in some grated Parmesan and top with mozzarella and toss in the toaster oven or air fryer for a few minutes until bubbly and golden on top. (Or you can do microwave, but I like the browning on the cheese) It’s almost like a cross between lasagna and pizza! If I have leftover meat sauce with ground beef and sausage in it, I use that and it really is like a fast, noodleless lasagna!

    Oh, I do the tuna with cauliflower rice like that and add a little cheddar cheese and dill weed and then bake. Kinda works as a tuna casserole replacement. Gonna try the yogurt this week. Thanks for the great ideas! 🤓
