    Nice. If you ferment for 24 hours you remove the lactose. You'll also get far higher bacterial counts as there appears to be an exponential increase in bacterial counts as time passes. I use a sous vide device for mine and put glass jars into a water bath. I recommend you try L. Reuteri yogurt if you haven't already.
