    Joe, I have share the story from last year. True story it happened to me. I made keto cranberry sauce last year to bring to a friend's house which I was the only one that ate it. I used monk fruit and I wasn't that educated on the way specific sweeteners react thinking all sweeteners are alike and they are not and since that I used monk fruit once the cranberry sauce cooled room temperature I had taken it with me to my friend's house shortly after that. When I had it was great. So I brought the rest home along with some leftovers to go. Later on that evening I decided to have a little bit of turkey and some of my cranberry sauce that was put in the refrigerator. When I took a bite of the cranberry sauce it was crunchy like I took a handful of actual sugar and put it in my mouth and started eating. πŸ˜– The monk fruit crystallized I tossed out the cranberry sauce. So swerve would have been the correct thing to use or allulose. And I also put a bit of orange zest in the sauce too since not using actual juice. Happy Thanksgiving to you too brother. πŸ™‚

    Hi Joe.
    Does keeping the sauce at room temperature prevent crystallization? I've made similar before, and the sauce is always crunchy when served. We prefer it chilled over warm or room temperature.

    I’ve made a similar recipe omitting the orange. I prefer the taste of Pyure so I use that instead. I use half the amount I would use in a regular sugar recipe. This also makes a great topping for low carb ice cream!
