When cooking suckling pig, or any whole hog, it needs to be slow roasted or smoked. Not BBQ'd. That's why the skin bun up! If you gonna cook over coals, it needs to be higher up above the coals. That pit was to small to cook those half pigs and the fire wasn't managed.

I have two suggestions. When you make dumplings by hand for this video the chef should be wearing gloves .When you roast half small pig on direct coals you want to stop small flare ups before they are small blazes. A spray bottle is a great tool at the grill/ Use water beer apple juice root wine vinegar what ever you like mon.

How much government assistance do the fellow countrymen receive I would like to partnership with Jamaica and let them receive social security benefits if it is agreed with His Excellency to have imported monetary values towards the banks so the citizen's can have their own bank accounts and health insurance it will cut down on crime and the people will feel independent but still respect the government JD
