    It's Beta Carotene and NOT vitamin A. The FDA allows food companies to conflate the two, but they are NOT the same. Only animal products have vitamin A. The human body converts the Beta Carotene into vitamin A, IF you eat the sweet potato with fat. Without fat, the body can't make the conversion. Hypothyroidism, diabetes or other problems prevent conversion.

    As a by the way, an interesting story..
    Aldi was out of my favorite vegan meatballs, LOL, I say favorite because we've only had them once and we went back to get more they were out and have been out for 2 weeks. So across the street to stop and shop I went looking for vegan meatballs and since I don't buy mock meat and rarely even veggie burgers, I did a very comprehensive search. I grabbed some Portobello 'Veggi balls", from a company called Franklin. Long story short I thought of trying to find Beyond burgers which I've never had, so of course I went to the meat section A place I have not visited in many many moons, because that's where I have always heard that you will find this product. But nope. I went back to the vegan meat case and looked again and disappointedly, turned away empty-handed. There was a nice young man putting stock away in the same Bank of cases and I asked him if they carried the Beyond burgers. He goes oh yes, squats down and reaches all the way back on the very bottom floor level shelf and pulls out a package of Beyond burgers for me. Literally, these things were in Rhode Island, I mean, they were completely out of sight, and there was no tag for them either. I explained to him that I was pretty sure the owners of the company wanted these placed in the meat section so people could make a choice. He said I know but….And then he proceeded to tell me without actually saying those words that his supervisor does not want them there and he basically tells them without actually saying so, to put them where they basically can't be seen.
    Hmm. Interesting, huh?

    The murasaki sweet potatoes are my favorite. I can easily eat 2 bags or 6 pounds within 12 hours, sometimes almost the whole thing in one meal. Hannah sweet potatoes are also delicious

    If the Japanese white sweet potato was a person, I'd be married. When you cook them in the oven, the potato will leak out (a little) and it crystalizes like sugar. Like sweet vanilla sugar.😗

    I had sweet potato fries for dinner last night! My kid loves them. I'd like to make fries with this Japanese variety. He would think they are Russet from the color, and then he'd get a big surprise with the first bite! 😈

    Dig Japanese sweet potatoes. I have two in the kitchen right now waiting to be plunged into the depths of my Instant Pot. I actually prefer the flavor and the texture over yams or orange flesh sweet potatoes.

    When I make sweet potatoes in my IP, no matter which variety, they take far longer than what you have in your video. It could be the fact that I live at high altitude. Usually around 25-30 minutes! I purchase them from Natural Grocers so I can get a couple/three at a time so I am not wasting food (no real place to store tubers without them going bad quickly) so they are usually a little thicker than the bagged varieties.

    Anyhow, great way to introduce people to foods they may not be familiar with. 🙂

    B-b-b-but beta-carotene doesn't convert to as much vitamin A – Stfu carnist, eat one sweet potato and you hit your RDI of beta-carotene, AKA your RDI of Vit A. I bought two sweet potatoes the other day, one purple, one orange, they each weighed 5kg… couldn't believe my fucking eyes hahahaha
