RIA,,,Hello, gee as you were making this I was salivating , I got 3REDSNAPPERS from COSTCO. years ago, but I USES A READYMADE ESCOVITCH SAUCE to do mine,then made gungo peas with coconut ,fried plaintain, I have a book from NAT GEO, with a bio & figures for various countriesBUT whomever did JAMAICA SCREWED UP BAD, they said PIMENTO WAS A PEPPER, YOU KNOW THE ITALIANS USE ? Well I scanned it & sent it around the world to student friends from KNOX COLLEGEabout 70people, well shortly I got MORE than I sent asking what JACKASS WROTE THAT, so NAT GEO WAS SENT MANY OF THEM, they appologoiced,,, sorry ! Who got to eat the burnt fish? I think parts of it would still be edible. I love to eat an entire fish vs fillets of fish only I’m not very brave to cook that for myself at home.
