    Lost me when you added pesto and red chili flakes and I didn't see chopped up onions, carrots, garlic, bell peppers. Shouldn't osso bucco be finished off in a Dutch oven or a half a hotel pan that you can put a top on then pop it in the oven at 350 or even 300 for a couple of hours, depending on size and quantity of the shanks.

    I'd add frying up some fine chopped onions, garlic, carrots and maby the mushrooms in the oil before adding the wine and finally some chopped fresh tomatoes. Perhaps reduce the amount of oil and add some butter initially.

    Great recipe! I was looking for something a little different than the usual carrot, celery, onion style versions. I also like a little heat in my dishes. It's winter here in OZ and this is perfect food for it. Served it on sweet potato mash. Will do again!

    You should be called Glen the Sloppy Chef. Holy cow. Osso Bucco is a great dish and this recipe looks great even if it's different from those I've used and even if uses pesto (strange), but your cooking etiquette as it relates to keeping things clean and your messy plating took away from it all.
