    Had pork brains & scrambled eggs quite a few times when I was a teenager & loved em. Just have not had them in a long time. As for that Jowl bacon…. It's one of my favorites !

    That being said, this Fall Festival is the second largest street festival in the USA… the first is Mardi Gras!

    I make pork and fennel patties for my family and they like them more than beef burgers. I have used that same recipe for meatballs with the addition of an egg and breadcrumbs. I have smoked italian sausage too…… I like pork and fennel LOL Gonna do a pork and fennel meatloaf with a cheese core on the smoker one day

    Saturday morning cartoons, then dad would come in and we would watch ABC's Wide World of Sports, usually boxing. Then he would cook us up a pork brain sandwich. I didn't know any better. I just thought people ate it and was part of our culture or whatever. Then I found out that wasn't the case…… later in life, I also found out that they are a great way to tan animal hides and how Native Americans have done it forever.
    Having said that, a little mustard and a good bun …..brain sandwiches are pretty damn tasty. Just make sure to get out the chunks of skull and blood vessels. Though I have no idea where you can get them these days unless through a butcher, but I don't think they can sell them anymore with CWD, Mad Cow etc. They used to be in the meat counter when I was a kid just like lunchmeat and cheese (to include Headcheese and souse 🤮)…. almost every IGA, or similar store around had them.
