    I grow borlotti, and two butterbean types and a small round white bean, my hubby will buy other types of beans, we always soak ours overnight. He makes a spicy bean casserole and bottle/can this into LB jars which is enough for us with a crusty roll. Great for winter!!! Thanks for the video take care

My husband and I are happily child free but I love everything related to cooking and homesteading!     Hi Becky. I only grow dragon tongue beans and they are truly very prolific. However, they are not pole beans as you say but rather bush beans. They are a gorgeous work of art and very yummy.

    Very inspiring video! Thank you! Just was wondering about filling the pot with hot water to cook. I’ve always been told to fill with cold water because hot water contains more dissolved minerals from your pipes and hot water heater which may give the food an off taste. Is this true or another old wives tale?

Just wanted to say you could have kept the cooking water your beans/onions were in to be the water in the jars. All that onion flavor down the drain, but I'm sure your beans will have a nice clean flavor anyway.

    As an aside, you may want to stop shaking your dry ingredient jars out over steaming pots. It looks like you may be starting to get some clumping going on in a couple of the jars. Doesn't take much moisture to ruin all that hard work and/or money spent.

    I've tried many way of canning dried beans, soaking does help with texture!! But what I've noticed, is that the texture majorly changes when using the electric pressure canner vs. pressure canner. The electric pressure canner makes them mushier or "not perfect" canned beans. Not sure why…. but that's my experience. As to dried beans, I love using the tarheel pole bean. They are a pole green bean, so you can pull them fresh as a green bean. I cook them 1) sauted green beans, 2) can them as green beans, 3) freeze them. But then, when I've had enough, I let them dry on the vines and they make a second product which is a dried bean (similar to a navy or northern white bean). I LOVE this because I get so many products. One and done for me. I used to do a few other types of green beans and white dried bean, but now just this one.

I have accumulated EVERYTHING I need to start canning. However, I am still intimidated by it all. This video helps take the fear out of it. I need to take the first step and dive in to canning.
