    Don't like the mung beans? When I was growing up I hated the mung beans, but now I like them with the rice. Also, long grain sticky rice, or short? Looks like you use the short.

    Another ingredient that my mom uses is shelled and split mung beans, it is really good to use to replace the duck yolk because it kind of models the texture of the yolk. Once it cooks, it gives this starchy, kind of mashed potato like texture, which goes really well with the seasoned meat and rice!

    I wonder if you could make some sort of version of this in a casserole dish or something, cause I'd have to drive quite some way to the city to find suitable leaves! Or maybe a container that you could steam or something? I want those flavors!
