Instead of doing the cornstarch and egg, you may find it easier to put the chicken in flour mixed with baking soda (not baking powder). This still gives you a really nice crisp coating without all the hassle of eggs. You might also try adding mirin to your sauce for flavor. It is sweet, so you can reduce the sugar a bit.
