Hi Kate! I made vegetable soup today. It was so good. I make mine spicy. I haven't made it in years so it was a nice change. I get to eat the whole thing myself. My kids won't touch it. I get 8 servings at 1 cup each. I put 5 in the freezer, 2 in the fridge and I ate 1. I use lentils, carrots, onion, peas, green beans, celery, corn and tomatoes I also used a couple of packs of taco seasoning, some red pepper flakes and vegetable broth, . oregano, black pepper and parsley. I put it through the recipe builder and it came out to 0 points. zucchini would be good in it and maybe some edamame, even some butternut squash. I didn't have any of those though. I also made a meatloaf with low fat organic hamburger and roasted potatoes. For some reason no one feels like meatloaf except me. It was small so I can make a few sandwiches or wraps or even throw it on a salad. I will probably make the soup weekly or every 2 weeks from now on. I have to see how long it takes me to get through this batch. I made a few desserts(sf ff pudding and jello, nothing earth shattering). Tomorrow I will probably try making a few things for my breakfasts and lunches. Normally I make yogurt but everyone has been out of the ff Fairlife milk lately. Now that I am concentrating on toning and maintaining, I think pre-planning is even more important.
