Ingredients 1 lb Italian ground sausage (mild for kid-friendly) 1/2 onion, diced 1 tbsp garlic (or three cloves) 1 15 oz can of tomato sauce 32 oz chicken broth 10-15 oz of tortellini 2 handfuls of fresh spinach 1 cup of heavy cream 2 tbsp olive oil Grated Parmesan cheese
Instructions 1) Press sauté on instant pot and add your olive oil. Once it’s hot, add your ground sausage and crumble it until it’s brown. 2) Add diced onions and garlic and stir until onions start to sweat. Add the seasoning mix. 3) Add tomato sauce and chicken broth. Mix well. 4) Close your lid, set valve to ‘sealing’, and pressure cook on high for 5 minutes. Once the timer goes off, let the pot depressurize for 5 more minutes. Then release the pressure. 5) Press sauté and bring soup to a boil. Add in your tortellini and cook, stirring occasionally, for 5-7 minutes. Stir in your spinach until it wilts. 6) Add your heavy cream and mix well. 7) Serve, garnishing with Parmesan and crushed red pepper.
