    Love your videos.
    Those Quick Pots seems to be so popular these days.
    We got one and I love to make vegan chile with the Beyond Meat vegan burger.
    Have you guys or do you plan to try the Air-Fryers that are also getting so
    popular. They are supposed to be a real number on roasting veggies. We
    have one on order and are looking forward to trying it out.

    INSTANT POT: SWEET POTATO-GARBANZO BEAN-GREENS STEW
    PREPARED BY THE HAPPY VEGAN COUPLE

    Use organic ingredients when possible

    2 medium onions sliced (1 red and 1 yellow) 2 large carrots sliced
    4 garlic cloves minced 2 large sweet potatoes cubed (4 cups)
    1 ½ cup cooked garbanzo beans 2 cans diced tomatoes
    1 tsp curry powder ¼ tsp cracked black pepper
    1 cup low sodium veggie broth 1/3 cup peanut butter
    3 cups of dark greens (choose kale, chard and/or spinach).

    Add all ingredients to Instant Pot except for mixed greens. Cover Instant Pot. Set sealing valve closed. If your pot has a chili-bean button, press this button. Set timer for 6 minutes on high pressure. Once the 6 minutes has passed, wait 2 more minutes and then carefully open the quick release. Remove cover and put in the mixed greens. Cover and let the greens soften up in the hot stew (you don’t need to add more cooking time for the greens since the stew is very hot). Once greens have softened up, take cover off, stir and serve.
    Note: Our Instant Pot is model DUO60
