Got an Instant Pot for Christmas and this recipe was my first try today! Absolutely delicious!! Not so easy to get liquid smoke here in UK but thank goodness I had some lurking in the back of the cupboard from a while ago from when I tried making coconut bacon!! Thanks for all the recipes, looking forward to making lots more.

I am new to the IP and am absolutely shocked at how amazing this came out! Fan-friggin-tastic. One little thing I encountered that may help others – I got the dreaded 'burn'' message on my IP about 10 minutes into the cook. Panic ensured as I googled it. Turns out the bottom of the roast was dry and made the IP think it was burning when all was actually OK – I just vented and lifted the roast to make sure liquid was underneath too. Lesson learned ~ make sure you have liquid under the roast before you start cooking. Also – I made a rub using your recipe and covered all sides of the roast as opposed to putting it all ontop. The bottom was just as scrumptious as the top. Thank you for this recipe – if you want to buy some crock pots cheap, I can help you out.

I tried this and loved it! I made a couple tweaks. I cut the meat into sections, seasoned it with all her spices and seared it on each side for about 2 min (I poured olive oil in the bottom and seared on sauté mode), I did this in batches until all the meat was browned. then, I poured a splash of chicken broth at the bottom and mixed up all the flavor and juices and put all the meat back in and added the bbq sauce and liquid smoke. Cooked it on meat/stew for 35 min and DELICIOUS!! So tender and juicy. It was fall apart!

I do this recipe once a month but I would suggest a modification. Do not add the BBQ sauce. Once done cooking, place the pork on a baking sheet lined with parchment paper, after you shred the meat, then pour the BBQ sauce on top, and place the tray in your oven. Set to broil for about 7-11 minutes and keep your eye on it after the 6th minute to watch for burn. Your watching to make sure that the sauce thickens and carmelizes. Remove from heat and let it cool. Your meat will have a better texture and the BBQ flavor will be much better. Serve with hamburger buns, coleslaw, and pickles. You should also have enough leftovers for lunches the next day.

Tip: while your pork is broiling, drop in 2 bunches of kale, Swiss chard, or collard greens (I use what I have) in the leftover remaining pork liquid for 5-10 minutes in the pressure cooker followed by a quick release for tender greens . I do this for my own keto diet plan, I don’t eat the hamburger buns but my family does. This is one of those dinners that none of my kids complain about and since they’re making their own sandwiches, they choose the amount of meat and toppings.
