I like to use an 8×3 inch Fat Daddio pan in my 8 quart instant pot. It's big enough that I can multiply most IP cheesecake recipes by 1.5 and serve a larger family. Doing this requires a longer cooking time (about 39 minutes instead of 28 minutes).
