    A bit late to the party, but Vital Wheat Gluten is just reg wheat flour with the starch washed off. Its more steps, but big bag of flour, most where I am are paper, make your dough with a kilo or so of flour, wash it like you would sushi rice til the water is clear-ish, there you go, VWG at home and in bulk with far less waste to be self conscious of. Chef Jana on YouTube has a recent(as of this post) recipe up showing this. Cheers!

    Wow! I have to make this!!! You make it look so easy! I'm thinking about trying it with a "breakfast sausage" flavor. My son is really missing that flavor and the mock meats in the store just aren't hitting the right spices notes. Do you think I can make them into patties or even Sausage links before I put them in the ipot?
