I noticed you added onion after frying the bacon. I don't find the amount of onion in the recipe ingredients. I'm assuming 1 medium onion of one's own choosing would be sufficient.

Looks delicious and pretty easy to make vegan with some cashew sour cream and maybe mushrooms marinated in tamari sauce for the bacon and a good non dairy cheese. I just got an Instant Pot and am going to try it, thanks!
