My mom always made porato salads with russets. Its what they had in the 50s. Now they use all kids of poratoes, but my favorite is still russets.

My family uses Miracle Whip instead of Mayo. I can eat Mayo a little bit now, but not a large dollop. I've seen videos of eggs broken open and dumped into a bowl placed in the instant pot to cook for salads and other dishes where they're chopped up. Could put a bowl of some kind on top of the potato layer with the egg innards in it. Then, no need to peel.
Would Yukon Gold Potatoes work as well as russet potatoes?
Mayo and hot potatoes is why I don't ever eat anyone's potato salad. Commercial mayo usually uses safe and sterile eggs. But we don't know what kind of mayo is used and whether the hot potato salad is left at room temperature to cool off before putting in fridge to chill. Too many variables and food poisoning isn't fun when I got it from mayo.

I had never thought of doing potatoes and eggs at same time though. How cool. I really need to purchase a steamer basket with feet. I have the rack the instant pot came with, but would really love a steamer basket. Guess that is my next purchase on payday.Thanks again.
