Recipe:
3 tablespoons light brown sugar
2 teaspoons hot paprika
1 teaspoon mustard powder
1/2 teaspoon ground cumin…I didn’t have any on hand…no biggie!
salt and freshly ground pepper
One 4-pound boneless pork shoulder, trimmed of excess fat and cut into 6 pieces
2 teaspoons vegetable oil
1/2 cup apple cider vinegar, plus more to taste
3 tablespoons tomato paste
2 cups of water – reserved

Coleslaw
1/2 head of chopped cabbage
1/2 c mayonnaise
add salt & pepper
1 t. chopped garlic
1/2 small chopped onion
1/4 c. diced carrots

Mix well and chill

Turn the #InstantPot to the high saute setting. Add the oil and once hot, add the pork and cook in two batches, turning, until browned & caramelized on all sides locking in the flavor, about 5-8 minutes. The meat has a tendency to stick to the pot!

Remove meat from pot and place in a bowl. Add the tomato paste & vinegar into the instant pot and whisk. Add the dry seasonings to the meat and stir well. Continue to stir tomato paste mixture and all to cook down. Add meat back into the pot. then add 2 cups of water.

Replace lid and set to high for 1 hr.
