I think this is definitely the next recipe I try! I've wanted to do more, but since we've had all this cold weather I've done the chili recipe three weeks in a row! It's delicious but I'm ready for some change.

Hey Jeff, I made pesto with fresh baby spinach, and it was delicious! This gives an alternative to basil that is milder flavor, and very readily available. Also, Pesto is great on pasta salad.
I did last week's Chicken and Aji rice, which came out super. So I'm all set to race over to Costco tomorrow and cook up a batch of this also. You are the Master of the Instant Pot. Thank you so much for sharing these recipes with us
I love your videos and books. While I realize that fresh basil would be preferred, we dry much of our herb garden. So, if I wanted to substitute dried basil how much would I use?

If so, what's the cook time, and if not, would you do it soon so you can share that info with us? Is there a general rule of thumb as to adjusting cook times on the box to the instant pot? Instead of, or in addition to, basil and pine nuts, you can use kale and pistachios or walnuts. I buy the bags of pre-washed kale and the pesto comes out really good. After all, the word "pesto" means crushed or pounded, not the actual ingredients: "The name Pesto originates from the Genovese word pesto, which means to pound or to crush. This refers to the way in which the authentic sauce is prepared, with a mortar and pestle."
I cooked the Aji sauce withe rice/ chicken twice this week and it was a hit!!! Can’t wait to try this one, my wife loves the shrimp 🍤 and I’m 100% sure it will be her favorite dish 🥰 thank you Jeff for all the amazing recipes 🙏🏼
I've been using pumpkin seeds in my pesto for many years. My son is allergic to nuts so I sub either pumpkin, sunflower or hemp seeds all the time. It doesn't really change the flavor.

The best thing about making your own pesto is that you can pronounce all of the ingredients.

Never thought about using sunflower seeds in pesto. I traditionally use walnuts. Love it!
