    Nice recipe!
    I would strongly recommend swapping out the "Cooking wine" for a real dry white wine. The difference should be remarkable. The old chef's adage of "never cook with a wine you wouldn't drink" applies here. Cooking wine is horrible tasting and loaded with salt.
    Everything I said is absolutely true except where I'm wrong.
