Thank you for another great recipe. I adapted this one for a seafood risotto. I merely followed your instructions. I included mushrooms and substituted powdered fish bouillon. Essentially, I cooked up the risotto and added a package of frozen seafood (scallops, mussels, shrimp and calamari). Kept the IP at low heat and I let the the heat from the cooked risotto thaw it all out. I also threw in a half cup of frozen peas. Now if only I could snap my fingers and instantly chop the onions.
Very good demo and the rice looked delicious
