    Not trying to be the ingredient police but I would consider swapping one of the cups of cream for a cup of low sodium chicken broth… Would be less rich tasting. Judging by the reactions seems like it was a bit too rich! Too much of a good thing as the saying goes.

    Another tip for keeping xanthan gum from clumping is to premix it in a smaller bowl with some kind of oil (I use MCT oil for this purpose) where it'll dissolve with no issue. Then you can just pour it into your soup or sauce and mix without worry.
