This looks great. I like dishes with lime and cashews, so I think I might like the options in the recipe. I have found that the nuts need to be added at the end of cooking, during sauté mode, otherwise the IP might overheat.
Here’s a tip, use a trivet to put a pot-in-pot of rice + water above it, cook 10 minutes, natural pressure release.
