Great recipe! Using canned beans makes this a lot easier–and I don't remember ever seen an electric can opener like that one before, so that was pretty cool!

I also really liked the touch of raw bok choy leaves as a garnish. The contrast in color and textures was very nice! Subbed for more! 👍

This looks amazing Mel! I love all of the veggies (and boo, I cannot find baby bok choy at my regular store, might have to check a couple of towns over in a "fancy" grocery store, LOL), and it is so quick with the canned beans and ham. Love this one, will have to try it this winter 🙂 I love the can opener too, I think I might have to figure out which one you use and get it for a couple of people as Christmas happies, great idea! Hope you are well, and staying warm! Have a wonderful and blessed day —-Stacy 😍💚🎄

I should know better than to watch your videos while I'm still hungry! haha
Haha, that automatic can-opener thing was pretty sweet. It even knew when to stop spinning!
    I don't think I've ever had bok choy before…
You ain't lying about these frosty winter days — living in the Midwest can be brutal, can't it?
Anyway, thank you for sharing, Mel. I hope your week is a good one!
