    1. You use the water as a base for a soup or sauce
    2. You deglaze the roasting tray and incorporate that with the fat into the soup or sauce. Or save half the fat as lard for cooking in the future
    3. Don't dump the oil during cooking as you'll assist in dehydrating the meat
    4. Don't leave the belly out to become too dry! I can see it's overdone.

Sometimes, when I put the lid on, it seems as if it is locked, but it isn't. I will have to readjust the lid which can slow down my cooking time. I'm pleased overall. I like the look of it. I enjoy the ease of cooking with it. Excellent item.
