    This looks suuuuper good! But for the sauce, COLD milk is waaaaaaay easier to mix in to the roux than warm milk. Take it from Chef John (a fellow SF Bay cook ^-^ I'm in support of my local YouTubers and cooks hehe). Cold milk yields a super smooth sauce every time!
