I gave this a try. I couldn't get hold of a corned beef seasoning mix so I just used some assorted dried herbs and spices I had. The flavour was great, but it seemed a lot more well done (i.e. brown instead of pink) than what your video shows. I used the instant pot Duo. Should I just reduce the cooking time to make the meat rarer?

I like to marinate the brisket for 24 hours and then love to bake low and slow and it smells fabulous. Then I fridge over night to get that huge amount of fat out of the sauce. I don't think I'll be using the Instant Pot for my brisket. I DID just cook a corned beef in it and it came out lovely. I now have the potatoes, cabbage, and carrots cooking. So far so good. I haven't had my pot for too long and am having a lot of fun with it but there are still some things that for me, I need to do the old fashioned way.

I'll be honest..it turned out way too salty for me. I think this is because it was cooked immersed with water. It was tender yes, and texture pretty good, but I think I will do this recipe but put it on a trivet above water instead. We shall see how that turns out.
