Wet a washcloth or kitchen towel and place it under your cutting board. It won't move about all over the counter 😊 I'm going to buy myself one of those fancy gadgets!

What size is your pot? I have a 8qt and it's very picky about the liquid. If it's even a tad dry it screams burn. The recipe sounds wonderful. I would also love to purchase one of those apple things you have.
