Looks perfect to use an immersion blender right in the pressure cooker liner with all the ingredients except for the chicken. I don't have a microwave but if I'm cooking it all in one pot the sauté function on low heat would likely work just as well. Then I add everything but the chicken, blend, add chicken and cook. No extra bowl or blender cup to clean. The video omits the marination step in the written recipe. Is marination not important? I wouldn't put my Instant Pot liner in the fridge since it's the size of a stockpot, but as the written recipe calls for a marinade as short as 30min I could certainly simply just delay the start on my pressure cooker for a short marination without compromising food safety at all. Perhaps 30-90 minutes, depending on how much time I have. With an Instant Pot, there's a delay timer function so that cooking can be set to begin automatically after the marination period.
