Chicken and rice is good. But I like the Mexican style. The Mexican Restaurants where I live have something called Greg's Special. It is Mexican style Chicken and rice. The story on it is a guy in Georgia named Greg would order Chicken and Rice and it started a trend where the local Mexican Restaurants put it on their menu. You can get it with Chicken or Steak or mixed.
It was Greg's Special at El Tejado in Forsyth, GA. I asked the owner of a Mexican Restaurant here in town. It just seems like the Mexican Restaurants where I live have it on their menu. Forsyth, GA is about 75 to 80 miles from here. My point was maybe the chicken could be cut up and cooked in the insta pot? Or maybe it's best the way they do it cooked on the stove.
