    It doesn't sound like you will save any time using the Instant Pot instead of over the stove method. The whole Chicken Adobo cook time on the stove is only like 40 minutes. The browning step looks painful on the Instant Pot because the surface area is quite small. Secondly you reducing the sauce at the end which is also a bit troublesome. With a stove method, you can cook and reduce in one step. I prefer using the Instant Pot only on items that would benefit from the pressure cooking. Chicken thighs with vinegar get tender really fast which defeats the purpose of pressure cooking.

    I'm currently obsessing over white adobo (Adobong Puti) which i tried at a Manila restaurant recently and now love. Apparently, some regions in the Philippines don't use soy sauce – they use vinegar and garlic primarily. I've seen some youtube videos but if i'm not mistaken, none are for the instant pot. It would be great if you could do a video on that! In the meantime, i'm trying your regular recipe! thank you!!!

    I'm glad I have the cookbook and this recipe is in it because I don't see it posted here. For the cook time, it's 8 minutes and she says to either quick release or natural release in the book. I haven't made it yet, but it's next on my list when I get all the ingredients.
