Looks very Delicious! I don't have a instapot, but i used to own a pressure cooker and oy! I made a few delicious messes in my time. I remember a friend of the family years ago made noodles n cauliflower, was quite tasty. I'll definately have to try your recipe! i too have a touch of acid reflux from time to time, usually after a meal I know I am not supposed to eat, I have a nice warm cup of fresh mint tea usually peppermint, with a dab of cream in it, helps me alot, oh and I add just a teaspoon of sugar for a slight sweet taste. quite soothing in the evening.
