    You've done it again! Great recipe! Pig tails have been eaten for centuries as they were part of the scrap heap that were given to slaves and poor whites. Same reason pig feet and chitlins are a delicacy today among certain groups of people. Unfortunately, I live in a city that does not sell pig tails (I know I need to move real soon 🙂 so I used a ham hock and it was just as good. I cooked the ham hock for an hour (always do) and added the meat to the beans for 40 mins with a natural release and they were perfect. Thanks!
