    First – that shirt screams ‘holiday’ instead of self-isolating. Cheered me up a bit!

    And oh, how I wish I had watched earlier! I made tortellini tonight for dinner and I could have done it in my PowerQuick if I had known the pressure cooking time! It was a totally different dish but knowing the time would have changed how I made it. You might want to try what I did and put your spin on it. Not so decadent but yummy! And I’d love to see your version.

    Bell pepper and scallions (I didn’t have shallots) sautéed in olive oil. Next I added 3 artichoke bottoms cut up and little thin asparagus stalks broken up. Deglaze with red wine – I used Pinot noir. Then in went 2 cans (or one large can) of Muir Glen unsalted fire roasted tomatoes with spices. Heavy on the garlic, dried basil and fennel seed. Then some rotisserie chicken gets put in – not much – enough to bulk it up but not overwhelm the tortellini. I boiled the refrigerated cheese tortellini and when it was ready removed from the water and into the pot of tomato ‘sauce’.

    Except for the refrigerated pasta (if this had had been dried tortellini) and the chicken, then this would have been a pretty easy pantry dish.

    Many of these high cheese and milk content ingredients are very hard to find at the grocery stores at this time (coronavirus pandemic). Please start doing simple recipes that are only 3 or 4 ingredients.

    Jeffrey! Aloha shirt is ta' die for lol! Epiphany time if I may skew topic a 'smidge…these hoarders are ransacking pasta & white rice & lentils & beans etc etc so those of us in critical infrastructure jobs are stuck getting brown rice & all kinds of oddball stuff for food supplies. As busy as you guys are if you ever get time to maybe do a weekly oddball recipe to keep our spirits up it'll sure help us out. Standard recipes don't have your magic baby!
