    My husband receives meals and he doesnt eat the barley soup so when i wasn't feeling good I ate it and low and behold I became a fan. Thank you for this simple and easy version. I don't have and instapot (yet) but it'll work well in a crackpot preparation. Again thanks ❤❤❤

    In the description, you forgot the step to add the barley lol but I made it and it was tasty. I modified it. By adding some tomato paste, mushrooms and used chicken stock with 1/2 a cube of beef stock

    It looks great and must make it ASAP. The main tweak I will do is shake the beef in some flour and stir a little more in with the sautéed veggies. That will thicken the broth a little so the soup won’t look so watery even though it probably is flavorful. I might throw a cut up potato in just because even though my mother probably wouldn’t. I love that it will be flavorful right away and not be an all-day affair like the last batch of beef barley soup I made even though the hands on time is about the same either way. I assume it is not quick cooking barley.

    Made this for supper tonight. I used "Better Than Bullion Beef" (this stuff is awesome), and dredged the beef in flour with salt & pepper prior to searing the beef. Brutally good!

    I should have tried using the couple of tsp of tomato paste suggested by richard425.

    I'm making this tonight! I searched for a beef stew recipe that has barely too. I like how you blended some of the onion and celery. My family is big on veggies so I'm going to being adding several sticks of celery, 1lbs carrot and couple onions. But I think adding a bit of puree will really help out the low sodium beef brauth. I'll write back tomorrow and let you know how we did 🙂
