Im wondering if it will be ok to use water or vegetable broth or crushed tomatoes/juice instead of chicken broth as we dont want the meat to mix with dairy?

I made this tonight and it is so good. I added chicken and mushrooms. Then after it was done cooking, I added spinach. This is definitely a repeat in our house!

Now that looked really good and simple to make. Any idea of carbs or servings? That's the reason I only eat out of a box anymore. There's a label telling me the numbers so I know how much insulin to take. lol
