    A great way of making the pan non-sticky is to rub oil liberally on it, heat it till smoking and then plunge into iced water. It instantly becomes non-stick. Wipe clean after every use or wash lightly with water after every use. Do the above process once in a while and you have an iron pan that works perfectly every time.

    I never make dosa anymore after too many disappointing results. I tried this because I had this exact amount (well, I had 11/4 cups) of sooji left and wanted to finish it up. This dish was a revelation. Thank you for sharing.
