    INGREDIENTS:-
    for spicy paste
    3 -4 kashmiri red chillies
    1 inch ginger
    7 to 8 ginger
    3 medium tomato
    1 tsp salt
    1 tsp sugar
    1 tsp cumin powder
    1 tsp coriander powder
    for broth/soup
    4 tbsp oil
    1/2 cup cabbage
    1/2 cup capsicum
    1 cup mushroom
    1/2 cup carrot
    4 to 5 cups vegetable stock/water
    1 tbsp light soy sauce
    peanut butter (optional)
    prepared paste
    1 tsp vinegar/lime juice
    1 tsp black pepper
    salt to taste
    for assembly
    cooked noodles
    fresh green onion
    fresh coriander
    crispy paneer/tofu (optional)
    spicy paste
    broth/soup

    METHOD :-
    -soak dry red chilies in hot water for 10 to 15 min. then add soaked chilies, ginger, garlic, tomatoes in the mixer jar. along with salt, sugar ,cumin and coriander powder. grind it into a paste
    -now set a wok and add 4 tbsp of oil. now add cubed paneer/tofu cook until ,brown from both sides.
    -now add the paste from earlier and cook it on medium flame for 5 to 10 minutes or until oil separated.now take 4 tbsp of paste for later use and add vegetable of your choice. cook it on high flame for 1 minute and add stock ,soy sauce ,vinegar, salt and pepper. combine well and let it boil for 5 to 10 minutes.(if you like creamy broth then add 2 to 3 tbsp of peanut butter that mix with water and make slurry out of it)
    -now cook the noodles and season it with salt and pepper ,add little oil in it.
    -take a bowl add cooked noodles, add soup ,fried paneer fresh coriander and green onion.
    -serve it hot and enjoy!
