    For the Danny Trejo cookies: to get closer to the taste of Mexican hot chocolate, use piloncillo in place of other sugars. It's almost a mandatory thing with Mexicans I've met for atole (a tole aye) or champurrado. Not available by you? I've fooled my friends with brown sugar. 🤫

    Can confirm – Danny Trejo's cookbook rocks. I regularly make stuff from it – barbacoa, carne asada, roasted Cauliflower tacos, nacho donuts… there's tons of stuff that's really fun to try making.

    That first recipe is exactly why you need a stand mixer. The gingerbread cookie I make at Christmas is thick like that. I couldn't make them without my Kitchen Aid stand mixer. Can't wait to try those Mexican hot chocolate cookies. We used to have a lovely crepe restaurant in our city that sold a lovely Mexican hot chocolate. (Sadly, they didn't survive the pandemic.)

    TBH I probably would use a wooden spoon for this after the basic butter and flour. Doing it by hand would weirdly be easier and would make a more tender cookie. (It's not a biscuit, Danny isn't from the UK)

    Danny Trejo is, by all reports, a genuinely great guy with a somewhat checkered past. He is trying to leave the world better than he helped make it as a younger man and is apparently super nice and fun now.

    Just as a small Tangent, Chai just means Tea in India, and always makes me chuckle when I see Chai Tea on a menu (Literally translates to Tea Tea), It should really be called Masala Cookies.
