    It is humbling that a Frenchman and an American are making Ramen in a Korean restaurant in Chicago. An example of how food that spreads into other cultures just gets better and better.

    I'm hoping and praying someone took you to Johnnie's Beef in Elmwood Park while you were there? If you're still there, please go and try the italian beef sandwich with giardiniera and dipped in the beef au jus. Get a lemon italian ice. Notice the quality of turano's bread that the italian beef is resting on. I was born and raised in Chicago and Johnnie's is an institution. (Do some research ahead of time, I'm not sure if they take credit cards. When I was a kid they only took cash.) Love seeing you in my city!

    Edit: Wooow, what an awesome journey you went on! I always love looking at a kitchen after service is over and everything is cleaned up and put away. It is a tad melancholy.

    You have to make a Bolognese series soon! I just came back from Bologna (my father is from there) there are so many interesting variations with all the different ingredients you can add. I visited this place that served "antique" ragu made with chicken liver! Bolognese is a big staple in swedish cooking as well so I have an entire swedish cookbook called Bolognese which is like 100 different recipes just for that!
