    True about the onions thing and some herbs and spices sometimes. Many times someone has walked into the house commenting on something smelling really good, peeked into the pot to be disappointed that it's only onions, salt and spices.

    great recipe! mom used to make a similar kind of soup when i was a kid. she started with a broth made from a browned ox tail, celery, onion, garlic, s&p, and a bay leaf. after that, the recipe is almost the same, she chopped the meat from the oxtail and add it in at the end, just to heat through. very fond memories from that soup. thanks for that.

    i always rinse my mushrooms (and most my fruit, veg and meat) in water with a little baking soda. after i run mushrooms through my salad spinner to dry them. a few drops less water makes them saute better and even that small amount of baking soda makes them brown more, boosts the Myard ? reaction. it works on onions and meat too, just a tiny pinch in your seasoning right before browning. it also helps to remove or neutralize any dirt and residues, etc.
