Hi Miranda! I think it was really smart of you to do a cost comparison of the mushrooms. I am thinking I will get some cans when they go on sale and maybe dry them off really well and sautéed them in a bit of oil or spray and get them brownish. They would be nice on a pizza or a mushroom Wellington if I can reduce the wet factor. The soup recipes look good. I love how your recipes don’t have 20 ingredients. And for God’s sake girl, get a crock you love. Just one. A different size from what you have…..lol. Peace and love to you! ☮️💕

These both look so great! I ate "goulash" a lot growing up myself, but it's been awhile since I've veganized it. I was already planning on lentil soup, salad, and bread with an Argentinian flair Saturday night for friends coming over. We traveled to Argentina long ago, and I want to recreate a lentil soup I had at vegetarian restaurants there. It's very similar to your soup, with some smoky flavor added in and also an apple. Thanks for the mid week mood lift 🙂

I made a very similar "goulash" meal this week! I also added some peppers I needed to use up and chopped up some mushrooms until you couldn't tell what they were, so the hubby wouldn't notice! 🙂 Thanks for another awesome video!

These both look so good. Thinking I’ll make the second one first and add in some curry spice. The first using pumpkin is such a great substitution, will try using original recipe first, then later pumpkin. Looking at the comments you give us great starting points to make them our own. Thank you for always inspiring me!

I haven't used canned mushrooms in several decades. I forgot all about them actually. They will be on my grocery list for this week. It's good to have shelf stable foods that are easy prep.

Wow, fresh mushrooms for 4.69 is insane! Here in the Philly burbs, they’re $1.50 😂. But our onions and potatoes are more expensive. Crazy how prices vary so much by area.

Oh my gosh I was looking for stuffed pepper recipes so I am going to use your first recipe but replace pasta with rice and maybe use Taco seasoning I stead of Italian but either way they are going to taste great! Thank you so much!!!

I love these ideas! Like you, it's not that cold here, but who doesn't like a good soup!? I think my kiddos will really enjoy the goulash recipe. Definitely will give that go this week! Thanks for sharing.
