We preñase 3 crock pot freezer meals this week and left them on the fridge. Whatever is left half gets frozen and half refrigerated for lunches. We normally like making burritos or fried rice depending on the leftovers we have.

All of those meals look great!
One idea I have used is to take canned soup and make it taste better by adding leftover meat, veggies, pasta or rice….makes it heartier and taste more "homemade", and also uses up leftovers nicely.

I picked up chicken thighs Buy1Get2 free so I cooked them all up in the instant pot. Half went to philly chicken subs (using hot dog buns and provolone slices that must go) and the broth and remaining meat is waiting in the fridge for a big pot of chicken and noodles. (Which will put a small dent in our abundance of carrots)

Yum! With the pasta dish, I try to cook the pasta in the other foods because it absorbs while cooking. You just have to add some water and the pasta helps thicken the sauce too. Best thing to do with leftovers is to make them into a new meal.

I usually cook 3 to4 nights a week and then have leftovers 2 to 3 nights and we get take out one night. Since my husband does better with leftovers if he doesn’t know they are leftover, I do try to reinvent them. A frittata is always a good way to use odds and ends of veggies and meats. I like the philly cheese pasta idea. I will be trying that.
