Simple and delicious! Thank you. Just a tip – I make a plain chicken and rice similarly – after searing the chicken on both sides, remove from pan – and begin the rice – add the chicken on top of the rice and it will finish cooking and stay super moist with the rice and you only use one pan. 🙂 Just hadn't thought to make a mexican version. Love it.
