    I buy organic potatoes (red/white/yellow/sweet potatoes) and then put them up in my freezer many different ways. Right now I have some diced, some sliced and some roasted half the called for cooking side not turning them time, and flash freeze them and place them into a Food Saver Bag to store. I then take the roasted ones for meals (put up in portions to feed two people twice) and thaw and then place them back into an oven and roast for the other half of cooking time on the other side).
    But what you need to know is if you plan on freezing these ahead of time, you don't want to put any butter or seasonings in them. They will freeze and hold their great flavor much better. Add what you want when you want to serve them for meals 🙂
    I put up 65 LBs. this last two months. It also saves you on cost because you never have potatoes going to rot on you before you can use them, you will save them all this way 🙂

    Great tip, I always make way too many mashed potatoes but usually make potato soup with them.  This way I can have great mashed potatoes for another meal almost instantly

    It would be nice if you guys assumed that most freezers are either to small, or to full of other crap, or both, to be able to fit even a small sheet pan inside. To often in these videos, when it is time to chill or freeze something, you open a door to find a cavernous empty space. You need to show alternatives that take reality into consideration.

    I make potato pancakes with them. A little flour, egg (depending on how much potato you have), a little milk and chives mixed in then pan fry in a little oil.

    Gosh! People refer to freezers as if they're some giant black holes where you can just throw whatever you don't use. Well, here's the thing: any individual mildly aware that they have to cook one day or another will have their own stack of necessary backups in the freezer. Do you really think there's room for scoops of fucking mashed potatoes??? Just make some flat bread out of it! Mashed potatoes are simply not worth freezing and thawing!

    Potatoes and rice are two things you just don't make leftovers out of. Partly because they're so damned cheap, partly because they taste much better fresh, and partly because they're both risky when it comes to food poisoning.
