One I'd like to try is a Dutch Apple Pie with a bit of sharp cheddar or Parmesan cheese mixed into the crumble for flavor (can use vegan cheese or nutritional yeast).
One we used to make years ago — apples, blueberries and yogurt (can use plant-based), with some granola as crumble on top
