I find that If you want it crispy but lower fat, you can start in in the fry oil then finish it halfway through in an oven or air fryer. It drains the oil but crisps it up.
I'm totally using that glue trick…I'm constantly telling people to be careful of the tooth picks!!

I've been doing this for over 50 years. This works especially well when making 1000 taquitos ahead of time for fundraising.
Also, quick note, when you're short on time, you can use canned beef in the 1 gln size, and add crumbled boiled potatoes and seasoning to make 100 taquitos.
